...and if so is there some sort of program that can convert the data into audio files readable by PC multitracking software?
(what would happen if I plugged a Roland vs880 Zip into my PC anyways?)

I'm sorry to say the answer is no, a PC will not understand the VS880 format.
Only the VS840GX with an external Zip drive supports "WAV" file conversion.
The only way you can transfer your audio tracks is to sync the VS880 up to your PC and record two tracks at a time, if you have a digital input on your computer you will not lose any audio quailty during the transfers.
