I have half a dozen different "software midi keyboards" like Sweet little piano, Midi Keyboard Pro, all good programs but... no one has a "save"/"save to midi" button. In the docs it says these programs "send the MIDI notes to the audio card". OK, but from there, how can I MAKE A MIDI FILE ??? Please detail your answer so I can understand :)

You need a sequencing program to record the file to.

So... how can I "plug" the software midi kboard in a sequencing program? For example let's say Fruity Loops (FLStudio)?

You don't say what you are recording your midi information with. To actually save something, you need to have something to save.
Normally, you have a midi file (or song) in your midi sequencer (recorder) program. You tell the program which midi "keyboard" or midi port you want the midi information to be sent to.
It is in the sequencer progam that the midi file is saved.
It's like typing on your computer keyboard into a word processing program and then telling your printer to print the words. Your printer has no way to save the file, it has to be done in the program (midi sequencing program in this case) that you created the words in.
A computer keyboard is like your midi controller, the word processor program is like a midi sequencing program and the printer is like your midi sound modules.
